
๐ฅญ Mango, Passionfruit + Chili Margarita
Mangoes are synonymous with summer in Australia, and the Sunshine Coast is home to some of the juiciest varieties. Add the tangy kick of fresh passionfruit and chilli, and you have a bold cocktail thatโs as vibrant as a Sunshine Coast sunset.
Ingredients:
- 1 cup of fresh mango juice or chunks
- 1 tablespoon of passionfruit pulp
- 60mL of tequila
- Sprinkle of fresh chilli (chopped)
Pop all ingredients into a blender and blend on high until smooth. Pour over ice and garnish with passionfruit pulp and chilli.
๐ Pineapple Mojito
Sunshine Coast pineapples are at their sweetest during summer, making them the star ingredient of this tropical mojito. Paired with fresh lime and mint, this cocktail is a refreshing reminder of why eating (and drinking!) in-season is so rewarding.
Ingredients:
- 1/2 cup of fresh pineapple juice
- 1 tablespoon of fresh lime juice
- 60mL of white rum
- Soda water to top
- Mint leaves
Muddle the mint leaves and set aside. Shake the pineapple juice, lime juice and white rum together in a cocktail shaker, and then pour into a tall glass over ice. Top with soda water to taste and garnish with the muddle mint leaves.


๐ Strawberry + Watermelon Daiquiri
This blended delight combines refreshing flavours with a frosty twist, perfect for sipping on warm summer nights. Using fresh, in-season Sunshine Coast fruits ensures bold, natural flavours that your guests will love!
Ingredients:
- 1/2 cup fresh strawberries
- 1/2 cup fresh watermelon
- 60mL white rum
- 30mL lime juice
- 30ml simple syrup (adjust to taste)
- 1 cup ice
Pop all ingredients into a blender and blend until ice is crushed. Pour over ice and garnish with mint and a sliced strawberry.
